Shrimp and Avocado Salad

We have a running joke about making a meal that includes everything my boyfriend is allergic to and/or does not like. We decided to have this “anti-Kyle party” while he is working abroad. So for New Year’s Eve, we created this recipe. I took this quick snap with my phone and emailed it to him.

Shrimp and Avocado Salad with a glass of white wine

This recipe is incredibly simple and delicious. Steam or boil shrimp for a few minutes until they turn pink. Peel the shrimp (if not pre-peeled) and chop into smaller pieces. Mix ketchup or tomato sauce with a dollop of mayonnaise and a splash of hot sauce. Season to taste. Add a tiny splash of Scotch. This adds a slight smokiness that compliments everything perfectly.

Cut several avocados in half lengthwise and remove the pit. Spoon shrimp salad onto the avocado half and top with a few olives. The olives are optional (mostly they are a nod to our “anti-Kyle” theme). One avocado half per person is a good portion size- this dish is very rich and goes perfectly with a dry white wine.
